Grinders and Mixers, what is the difference between grinders and mixers except for their intended use?

In general, a grinder is used for crushing herbs and spices. A mixer is typically designed to mix dry ingredients with liquids or oils, creating a batter or dough that can then be baked into breads or other items. The most common device for this purpose would be an electric stand mixer.

Grinders can be found in a variety of shapes, sizes and prices. They are available as electric or manual or with attachments that make them more versatile. You can find them at a high-end kitchen appliance store or even at your local grocery store where they sit on the baking aisles next to mixers.

Many have a blade that spins around so that it grinds ingredients finely into a powder form (see picture below left). Some have grinders with multiple blades also but they do not tend to be as well-made as the one shown above left (right).

Some grinders are designed to sit on your counter top and resemble a coffee grinder. They usually have a large grinding bowl with a handle that unscrews to access the blade (see above right). At least one is necessary, but most benefit from having two or three blades because it forces more air through the shredding mechanism, making it easier to grind herbs and spices.

Typically, more blades mean better performance. The design of the motor itself can also affect performance in that all friction occurs within the motor which would make it less efficient for use for prolonged periods of time. Grinder blades can rotate in two ways: clockwise and counter-clockwise (or vice versa). Some grinders allow you to adjust the blade’s direction which is most useful for ingredients that tend to stick to the side of the grinder bowl, such as nuts or especially hard spices like black peppercorns.

The design of the grinder as well as its size are also important factors in your choice. Smaller models may be more convenient on a counter but they do not provide the same power. Larger models allow you to pack in more fruits and herbs for a long time grinding and tend to have longer effective life span due to their increased horsepower.

Some grinders have a stainless steel housing which is thicker and heavier than those made from plastic. It’s always important to look at the construction of your grinder if possible because those made from plastic can break easily, especially if they are dropped or knocked by accident (see picture above right).

In contrast, a grinder made of metal is more durable and can usually withstand more abuse. The small, cheap plastic ones you find at the grocery store are probably going to break within a year but they are fine for occasional use. A cheap grinder can easily have this break, leaving you with an expensive (and useless) hopper and motor. You want a grinder that has been designed with quality components to withstand this type of abuse.

There are also rubber feet that protect your countertop from scratches. Some of the smaller types do not have this protective device and so you would be wise to apply a thin layer of stick-on rubber feet for protection.

The grinders with multiple blades can also have an adjustment knob that allows you to select each blade’s level of coarseness, from fine powder all the way up to very coarse (see picture below). You need a grinder with just one blade when you want to evenly mix dry ingredients for baking, but in other cases, multiple blades are better at producing more air flow around the grinding parts and thus make your job easier when grinding herbs and spices.

The Speed Adjustment:

This control is usually located at the top of the grinder where you can control the speed of the grind, either by turning the adjustment knobs or by pressing a button. The point is that this control allows for very fine adjustments in speeds to accommodate different ingredients. Of course, it makes sense to use lower speeds for more even mixing and higher speeds for grinding more quickly and efficiently. Some models are able to also provide variable speed settings depending on what type of ingredient you are grinding (see picture above right).

There is one important thing to know if you want to use your grinder as a coffee grinder so that it can make espresso or other drinks (i.e. latte, cappuccino). The grinding procedure should be faster than when making a pot of coffee. Breaking down beans into the fine powder that is necessary for espresso takes a shorter time than grinding your beans to produce a pot of regular coffee.

If you are not using your grinder for this type of use, you can simply grind your ingredients and then let them sit in the grinder to soften and get even more flavor as they steep. The point is that this type of fine powder is not necessary when making a pot of coffee.
